Savoury French Toast

- 
      
        
          
        
      
      - 3 eggs 
 - 1 tsp dried thyme 
- 1/2 tsp paprika 
- 2 tbsp grated parmesan 
- Salt and pepper 
- 4 slices of spelt sourdough 
- 2 tbsp olive oil 
 To garnish: - 6 cherry tomatoes 
- Fresh parsley, finely diced

      - Whisk eggs, dried herbs and spices, parmesan, salt and pepper in a dish until all ingredients are combined. 
- Dip each slice of bread into the egg mixture, coating both sides evenly. 
- Heat 1 tbsp oil in a pan over medium heat. 
- Place the coated bread slices pan and cook until gold and crispy on both sides. 
- While toast is cooking, saute cherry tomatoes in a separate pan wit remaining olive oil.
