Berry and Vanilla French Toast

      - 2 eggs 
- 1/2 tsp vanilla essence 
- 1/2 tsp cinnamon 
- 4 slices of spelt sourdough 
- 1 tbsp olive oil 
 The garnish: - 4 tbsp Yopro vanilla yoghurt 
- 1/4 cup blueberries 
- 1/4 cup raspberries 
- Optional: maple syrup

      - Whisk eggs, vanilla and cinnamon in a dish until ingredients are combined. 
- Dip the bread in the egg mixture and coat evenly on both sides. 
- Heat oil in a pan over medium heat. Cook the toast until crispy and golden on both sides.
